Cool Herb & Spice Recipe for a Quick Cool Summer Soup!
Fresh Fresh Fresh
It's so warm outside, that often we want to eat something that is nice and cool and we don't want to spend to much time making it!
Here is a nice recipe using only fresh and wholesome ingredients. It's a quick and cool summer soup.
Not only is it quick and cool, but it's full of the most nutritious ingredients. On top of that, it is very satisfying.
You can vary the ingredients of course, but basically it looks like this:
Place the following ingredients in your blender:
-The juice of 1 lemon
-2 cloves of garlic
-2 tablespoons of dulse flakes
-1 organic tomato cut up in chunks
-1 organic cucumber cut up in chunks
- 4 celery strands
-1 ripe avocado
-2 cups leafy greens you have left (green chard, rainbow chard, kale, collard greens, spinach or lettuce)
-1 half teaspoon pink Himalayan salt
-2 tablespoons umeboshi vinegar
1 to 2 cups of water
Blend everything till you get a nice consistency that you enjoy. Leave it in the fridge for an few hours if you like really cold soup and serve with some fresh sprouted lentils on top to give that extra fresh crunch.
Otherwise serve it right away and make sure you offer some to the people around you. You might just end up like me, drinking the whole thing...it's just so delicious!
Of course, you can make an "Italian" version on the same theme.
You would then add some red pepper and some fresh basil instead of the dulse flakes. Also, you could add some fresh oignon, extra tomato, a little less greens and some oregano, dried or fresh (not too much). Don't forget the black pepper when you serve. It's just so tasty!
